ابتدا بادمجان  را به روش گريل  و يا در فر بدون روغن گريل و يا كبابي مي كنيم . سپس توك قاشق روغن در ماهيتابه ريخته يك دانه پياز و مقادير فراوان سير را تفت مي دهيم زرچوبه فلفل مي زنيم . سپس بادمجان ها را اضافه كرده باز تفت مي ديم . سپس مقاديري گردو در غذاساز ريز كرده اضافه مي كنيم . به دليل رژيمي بودن اين رسپي خبري از نعنا داغ و سير داغ پياز داغ نامتناهي نمي باشد ? پس چه كنيم؟!  نعناي خشك را همينجوري مي ريزيم قاطي بادمجان ها تا تفت بخوره و نعنا داغ شبيه سازي بشه ? قول شرف مي دم بتون مزش عين همون رسپي اصلي مي شه ? در آخر آب اضافه مي كنيم در ظرف را بسته يك ربع نيم ساعت كه پخت كشك را اضافه مي كنيم .  كشك بادمجان هلثي بدون روغن شما آمادست نوش جان .
