براى تهيه بادمجان ورقه به روش سالم و هلثى، نياز به چهار عدد بادمجان بزرگ حلقه حلقه شده داريد…در ساندويچ ميكر گريل مى كنيد.
سپس سه الى چهار عدد تخم مرغ را با همزن برقى چنان مى زنيد كه حسابى كف كنه!?

حال كف تابه اى پهن را كمى روغن اسپرى كرده و ورقه هاى بادمجان را بچينيد و رويش نمك و فلفل و زردچوبه بپاچيد ، سپس تخم مرغ ها را اضافه كرده و روى آن كمى فلفل قرمز چيلى و زردچوبه براى خوشرنگى بيشتر بپاشيد و در تابه را بگذاريد به مدت بيست تا سي دقيقه تا تخم مرغ ها ببندد و غذا جا بيوفتد! بادمجان ورقه  شما آمادست ? نوش جان
